I was out with friends the other night and it was mentioned to me that I need to put up more recipes.
Have I ever mentioned that I hate to cook? Surely you’ve seen the bloody mess that happens every time I get a slicer, grater or knife in my hand right?
We all have to eat though, so point taken – I’ll work on it.
For today though I wanted to do a no-bake dessert. One that I know my friend (that mentioned the recipe thing) and her husband will love.

Easy, No-bake Chocolate Cream Pie
You will need:
- Pre-made graham crumb or shortbread crust
- pudding (use chocolate, vanilla, butterscotch, coconut, banana – whatever you like)
- 1 cup milk
- Cool Whip
I’m a chocolate girl, so we went with chocolate pudding – the instant kind, not the need-to-cook version.
The package tells you to add 2 cups of milk for pudding. For this recipe, you only add 1 1/4 cups of milk to the pudding mix. Mix for 2 minutes on medium speed of your mixer.
I add anywhere from 1/3 to 1/2 of a container of Cool Whip to the pudding mix. More Cool Whip and your pie will be lighter. Less and your pie will be more chocolatey.
Fold the Cool Whip into pudding mixture.
Pour into the prepared pie shell and chill for at least an hour.
By adding less milk than the box instructs, your chocolate cream pie won’t sag and run out of the shell. You can see below that even with a slice taken out, the rest of the pie still holds it’s shape.
Light, fluffy, and the shortbread crust makes this chocolate cream pie to-die-for.
The best part – I made this in 5 minutes, chilled it for an hour, and still look like a rockstar to Hubby and kids!
