and I suddenly had a craving for homemade potato chips.

Oprah’s recipe is good, but I found it a bit much, so I changed it up slightly.

  • Preheat oven to 400 degrees farenheit.
  • Lightly oil baking sheet with extra virgin olive oil or cooking spray.
  • VERY lightly – I liked the olive oil version better, but I used WAY too much the first time around.  1 tsp will be enough for an entire baking sheet.
  • Put the oiled pan in the oven and let it warm up while you slice your potatoes.

Slice your potatoes very thinly.  The recipe suggests about 1/16th of an inch, but I liked mine a bit thicker than that.

(I used the guard this time, so all fingers remained intact!)

Pull pan out of the oven and lay the potato pieces out in a single layer – lightly season with salt and pepper.

Bake for ~8 minutes then flip the potatoes to their other side.
Bake for an additional 10 – 14 minutes or until golden brown and crispy.

If you went with thicker sliced pieces, you may have to go 12 and 15 minutes.

For the cheesy garlic dip:
You will need…

 

  • 1/4 cup chopped fresh parsley
  • 2 Tbsp. chopped fresh rosemary
  • 1/3 to 1/2 of a garlic clove, finely minced  (Oprah calls for a full, large clove – but I found it too strong)
  • 1/2 cup grated Parmesan cheese
  • 2 cups sour cream or plain yogurt
  • 1/4 cup milk


In a medium bowl, combine all ingredients and mix well. 
Serve with warm potato chips.

They were a hit!  My first (soggier) batch and my second attempt.

In fact, even the crispier ones – not burnt, just crispier – taste pretty good!

Two potatoes will fill two baking sheets, but you’ll want to do two – they really are good!
