One of my favourite things in summer is sitting out on the patio on a Friday night after work, sipping caesar’s and eating guacamole.  It rarely happens, but it’s like the ice cream truck… you have such fond memories of the last time you did it, that it’s a special treat when it happens again.  Today I’m sharing my favourite guacamole recipe and hopefully we’ll all be sitting on the patio enjoying it this weekend.

I turn to my blog whenever I’m looking up recipes of items I’ve tried and loved.  It’s a quick resource of some of my favourite (tried and tested) foods, and especially helpful to have it available online when I forget the recipe and am at the grocery store.

The other day I noticed that I hadn’t shared my favourite guacamole recipe. 🤦🏻‍♀️

My favourite guacamole recipe

I use a Tupperware Power Chef chopper because it’s easier than a food processor, is easily put into the dishwasher after and I can make and serve the guacamole in the same bowl.

I’m putting a few options below, but the only one I can recommend is the Tupperware version.  It’s the most expensive, but it has a lifetime warranty and I’ve had mine for years.  It’s great for so many things.  (I don’t even own a food processor, this is all I need)

Put approximately 1/2 cup of onion and roughly 2 tsp of fresh cilantro into your chopper.  If fresh cilantro is too strong, use 3 tsp of cilantro flakes.  Turn/chop until finely diced.

Add in your tomatoes and chop again until desired size.

Peel, pit and halve your avocados, then add them to the chopper along with the lime juice, minced garlic, salt, and cayenne pepper.

Turn/chop until your guacamole has your desired consistency – be it smooth, or a bit chunkier (like below)

Let sit in a covered container in the fridge for about an hour, or until all of the flavours are well marinated.

Put your manual food processor in the dishwasher and go sit outside and enjoy!

You can use this as a spread on sandwiches as well – it tastes great with chicken.

Mine never lasts long enough to have leftovers for sandwiches, I can eat this entire amount in 2 sittings. 

It’s actually enough to serve to a few guests if you’re not a glutton – but I did title this article “My FAVOURITE” 😂

Cilantro seems to be a controversial ingredient from what I’ve seen online.  I’m not a huge fan of the taste, so I actually prefer the dried cilantro flakes for a milder taste.  The 2 tsp of fresh called for in this guacamole recipe gives a fairly strong taste without completely over-powering the guac.  Add a third tsp of fresh if you are a lover of cilantro.
