Pasta Salad – Caesar Style

I had my parents over for an anniversary dinner the other night and I used them to test out a few recipes I’ve been dying to try…

Amazingly, all three recipes were a HUGE hit!

As you know, I am not a stellar cook.  I can bake, but my cooking anything almost always results in the smoke alarm going off.  It’s to the point where we’ve actually pulled the smoke detector nearest our kitchen out of the ceiling.

Not this night…

this night I was a ROCKSTAR!

I’ll share the scrumptious pasta salad we had:

Caesar Pasta Salad

You will need:

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 large clove garlic (minced)
  • 2 tbsp lemon juice
  • 2 tsp worcestershire sauce
  • penne pasta – enough to feed your family, cooked al dente and rinsed with cool water
  • romaine lettuce
  • 1 1/2 cups grape tomatoes
  • 4 green onions, green parts chopped finely
  • 1/2 cup finely shredded parmesan cheese
  • 1/2 tsp black pepper
  • 1 1/2 cups croutons
  • Optional: top with 2 grilled chicken breasts (diced)

Directions:

In a small bowl, mix together mayonnaise, sour cream, minced garlic, lemon juice and worcestershire sauce.

Pour half of the dressing over the cooked pasta and refrigerate

Just before serving, mix in the remaining ingredients and remaining dressing and serve.

This Caesar pasta salad made enough to feed 6, with plenty leftover.

If you do have leftovers, remember to refrigerate promptly to keep the mayonnaise from spoiling in the sun….  that is assuming you eat this as a summer patio meal.

Adding the grilled chicken breasts will make this more than adequate as an entree…

and it is SOOOOOO GOOD!

The kids, my parents and even Hubby all went back for seconds!  (that almost never happens when I cook. lol)

    This does look yummy. I am going to try it this week-end. I like lots of garlic so I may add another clove.

      Hope it was a hit? We’ve had it again since the post and I think the key is to split the dressing. Half on while it sits in the fridge, and then the other half on before serving – keeps it really moist and delicious!
