Chicken pizza is just a pizza with chicken bits on it. Pizza chicken is a chicken breast turned into a pizza!
This recipe came about sort of accidentally – Hubby was making chicken parmesan for us one night and called it “Pizza chicken” to entice the girls to try it.
They loved it, so he made it another night when Papa was visiting. Papa then took the recipe and evolved it into the gourmet pizza chicken recipe here:
You will need:
- 4 boneless, skinless chicken breasts
- 2-3 eggs
- 1-2 cups plain bread crumbs
- 1 cup flour
- 1 cup canola oil
- 1 cup bruschetta mix or for a lighter taste, tomato salsa dip
- 1/4 cup each of pizza toppings per your preference…mushrooms, onions, peppers, bacon, etc
- 2 cups mozzarella cheese
Preheat oven to 350 degrees fahrenheit.
Pour 1 cup of canola oil, about 1/8 inch deep into a frying pan…electric frying pan set at 375 degrees, is best.
Spread flour, egg, and bread crumbs separately onto three 7-9 inch dinner plates.
Toss a single breast at a time into a large zip lock bag, or between sheets of saran wrap.
Use a meat tenderizer or heavy mallet to pound your chicken breasts uniformly thin and flat…to make at least a pizza-slice size “round or oval” of chicken
Sprinkle you favourite spices onto the chicken.
Dredge the flattened breasts into the flour, then coat floured breasts totally in whisked egg, and finally flip and roll the slippery breast over in the bread crumbs to coat.
Once you have coated 3-4 pieces of chicken, slide the chicken into the hot oil to fry. Fry both sides of the chicken until the surface is golden brown, about 3-4 minutes each side, and when you cut into the chicken, the flesh has just turned white, not pink. Set the fried breasts onto a double layer of paper towel to remove excess oil.***
While the chicken is crisping up, cut your pizza toppings – we used chopped bacon, sweet vidalia onion, mushrooms, green and red peppers, and some diced green onion. Gently fry the bacon until it produces a little melted fat, add the onion first to the bacon and fat for a minute, then add mushroom for a minute, then add peppers and green onion for the last minute, until all has cooked a bit to soften. Drain the fat off. Allow the fried mixture to cool.
Put a layer of your bruschetta mix onto the chicken, then by hand, sprinkle and add your other softened / fried toppings and top it off with a nice layer of mozzarella cheese. (Papa used a sweet mango salsa in lieu of bruschetta mix)
Bake at 350 for 15-20 minutes – until the chicken is heated through and the mozzarella is melted.
The kids will love this – and you might even be able to sneak a few vegetables into their meal without them protesting.
***You could prepare the breaded chicken breasts the night before a party, and just add the fried, softened mushroom mix, bruschetta, and mozarella just before cooking at 350 degree F. for 20-30 minutes to serve.
