Drool over the prospect of swordfish or mahi-mahi?
I hate fish.
I’m terrified of them alive and swimming, and I can’t stomach the ‘fishiness’ of them in food.
BUT, I do love this dinner that my Step-Dad makes. You get the nutrition of a salmon without the strong flavour or texture of it.
Even better – it’s so easy even I can’t screw it up!
- Make up your mashed potatoes.
Preheat your oven to 425° fahrenheit.
I buy these salmon steaks at Costco. They are individually packaged, relatively inexpensive and they taste great (as far as salmon goes).
- Place the frozen salmon steaks on a cookie sheet (lined with tinfoil)
- Cover with warm mashed potatoes.
- Bake at 425° f for 18 minutes
You’re done your salmon mashed potatoes!
You can get fancy if you want and buy fresh salmon steaks and add a bit of Montreal steak spice to the fish before covering with mashed potatoes – they do taste better, but since this was both Mom-that-hates-to-cook-night and kids-that-complain-about-everything night – we went with the basics.
And we all ate every single bite!
