This is a great one for the freezer. Defrost, heat up, and add pasta. I actually do half spaghetti, half zucchini put through my “Veggetti” (it turns vegetables into pasta like noodles – amazing!). This time of year can be tough to find good quality, fresh vegetables so this is a good one to do in batches.
You will need:
1 lb lean ground turkey
1 can diced or crushed tomatoes
2 carrots, peeled and chopped into small pieces
2 rib celery, chopped into small pieces
1 onion, chopped
2 cloves garlic, minced
salt and pepper to taste
Saute turkey until cooked.
Add carrot, celery, onion and garlic.
Saute until vegetables are soft, a few minutes.
Add tomatoes and simmer about 30 minutes.
Serve with pasta or freeze.
