Two-Ingredient Pumpkin Muffins

2 ingredient pumpkin muffins - moist, delicious and all you need is a cake mix and a can of pumpkin filling!

You will need:

  • 1 can pumpkin pie filling – regular size, not super-sized
  • 1 box spiced cake mix

The grocery store I went to didn’t have spiced cake mix, so I went with a carrot cake and it’s almost as delicious as the version Lovely Lisa brought over yesterday morning.

That’s how this started – the kids are back in school, Lisa’s youngest is in JK this year, so we finally had time to sit down over a cup of tea and catch up (it’s been awhile).  She brought over these to-die-for pumpkin muffins and I had to restrain myself from gobbling them all up.

Okay, I didn’t restrain myself that much, I gobbled up what she brought over, got her recipe and then went to the grocery store to make another batch.

God I’m a pig!

2 ingredient pumpkin muffins - moist, delicious and all you need is a cake mix and a can of pumpkin filling!

I can say that because you will be too once you try one.

Mix the pumpkin and cake mix together, put into lined cupcake baking pan and bake for 20 – 25 minutes. (until a knife or toothpick inserted into the centre comes to clean).

That’s it.

Lisa made hers with the spice cake mix and they were spectacular.

Mine were made with the carrot cake mix and they were pretty delish – but not quite as good as Lisa’s.

I’ve also seen these made with regular white or golden cake mixes, but (without having tried it) I think it would lose something without the fall spices in the mix.  It’s the nutmeg, cinnamon, cloves and ginger that really takes anything pumpkin from yum to ‘DA BOMB’ right?

    I love these muffins! I’ve made them for years, except I add a cup of butterscotch chips. Totally a family favorite, too. Thanks for reminding me it’s time to buy the spice cake mix! :-)

      Butterscotch chips? It makes them better? (I didn’t think it possible). If we hadn’t eaten three cake-mixes worth last week, I’d be whipping up your recipe today! On my Fall to-do list – thanks for sharing!
