I know we’re down to the wire here and your baking window is closing rapidly but this turtle fudge is so easy to make – you can whip out a batch in about 15 minutes! (and no one will know you didn’t spend hours stirring!)
Look at the caramel drizzling out!
Turtle Fudge
- 40 caramel squares (I like Kraft the best, but it’s up to you)
- 1 tbsp milk
- 3 cups semi-sweet chocolate chips (the better quality chocolate you use, the better the fudge – but mine was pretty freakin’ scrumptious using regular baking chipits)
- 1 can sweetened condensed milk
- 1/4 tsp of salt
- 1 1/2 cups chopped pecans
- 1 1/2 tsp vanilla
For easy removal, you’ll want to line an 8×8 pan with parchment paper and then lightly spray it with cooking spray.
Microwave caramels and milk in a Pyrex dish on high in 30 second increments for up to two minutes or until caramel is completely melted. Stir at each 30 break until smooth and creamy.
In a heavy saucepan melt the chocolate chips, sweetened condensed milk and salt over low heat, stirring often.
Remove from the heat and stir in one cup of the pecans and the vanilla.
Scoop and smooth half of the fudge mixture into the prepared pan.
Pour the warm caramel over the fudge mixture, then spread the remaining fudge on top of the caramel.
Sprinkle with the remaining pecans.
Cover and refrigerate at least two hours.
You’ll want to cut this into small squares because it is RICH. Chocolatey, caramel-drooly rich.
Tuck a few into pretty packages and deliver to your neighbours – it’s all about giving right? I wanted to give them as big a rear-end as this fudge was giving me. lol
