We had a running joke at Christmas over Andy’s nuts; Hubby whipped up a batch and then we served them to everyone… and the accolades were unanimous – everyone LOVES Andy’s nuts.
Even my Dad, who is a plain nuts kind of guy, couldn’t stop eating them. Hubby didn’t mind that I devoured Andy’s nuts in one sitting – which would have been seriously frowned upon before our wedding (so I could fit into my dress of course). You won’t be able to stop at just two either – fortunately you can fit A LOT in your mouth. (I was going to end that sentence with “without gagging”, but thought maybe I’d taken it too far?)
As you can tell, it was easy to go on all day with the innuendo – and in all honesty Andy’s candied nuts are pretty spectacular.
Gipper’s Game Day Beer Nuts
You will need:
- 4 1/2 cups raw blanched peanuts
- 2 cups sugar
- 1/2 teaspoon salt
- 1 cup water
Directions:
Bring water, salt and peanuts to a boil – adding in your sugar a bit at a time so that it absorbs and is no longer visible.
Continue to boil, stirring constantly, until all of the water is absorbed – approximately 20 minutes.
Preheat the oven to 300 degrees – convection is best.
Line a cookie sheet with parchment paper and then lightly butter the paper.
Spread the boiled nuts out on the parchment paper and then bake for 20 minutes.
Flip the nuts over, salt again (to your taste) and return to the oven for another 15 – 20 minutes.
Allow to cool completely.
Store in an airtight container.
These will never last until Valentine’s Day, but I wanted to get the post up so that you could make a batch of these beer nuts / candied nuts for yourself and again for your sweeties on Valentine’s Day.
I just made a few cute tags and packaged them up in clear cello bags with a little baker’s twine.
.
These wouldn’t be appropriate for classroom treats – there are far too many nut allergies out there, but it would make a nice treat for teachers, coworkers, neighbours and friends.
Spread the joy and share Andy’s candied nuts with everyone – his wife won’t mind. (You are very kind Deb. lol)
If you want to add an extra sweet treat, sprinkle a few red and pink M&M’s into each bag.
Thank you Andy – for sharing your nuts with the world – they (and you) are spectacular!
XO
Have a great one!
